"Dining at Capricorn is like joining old friends
for dinner, although you've only just met these people and the food is much
better! Clarence and Annabel, who hail from colder and more hectic points
on the globe, cut the ribbon at this small intimate Beachside Bistro in July
'96. Together with their friendly staff, Clarence and Annabel preside over
the homey festivities each evening with grace, decorum and bonhomie. The
kitchen, under Clarence's personal direction, turns out a varying assortment
of prize recipes gathered from the couple's worldly travels & continuing
gourmet experimentation. From Caribbean Seafood concoctions to traditional
European/Continental Cuisine, Capricorn's intimacy
and food conspire to provide the freshest and most creative dining experience
on Ambergris Caye".

Sausalito, California while staying at a nearby resort on Ambergris
Caye....

Capricorn has three cozy cabanas on the beach and one air conditioned suite above the main
building.

Continental breakfast served overlooking the ocean is complimentary. Lunch and dinner
are at menu price, with daily specials featured. |
A completely biased editorial note!
My experience of Annabel, and Clarence began with a moon light sail up
the east coast of Ambergris Caye to their Capricorn resort.
We arrived around 7:30pm, and strolled down the dock to a picture perfect
small outdoor bar. Of course it was a warm perfect evening with the
stars bright in the sky (it's even pleasantly warm when it rains on
the Ambergris Caye). Annabel met us, relaxed, elegant. One arm on my
shoulder- she's telling me about the dinner that will be served later. But no
hurry.
We elected to eat on the verandah so we could still be connected to
the palms and ocean just a few feet away. We all talked
of many things, politics. the internet, and how she and her husband
came to be here. The night was filled with fantastic food,
beautifully prepared, great conversation and a setting that so perfect
- ah, you wouldn't believe it. In paradise, this is where you want to
experience it. There is spell woven in the warm evenings here -
something about Annabel and this place and her husband's wonderful
cooking and the ocean and the sailing. Home you go, bewitched.
