Here is one great recipe for chaya -- the world ultimate health food that nobody know about.

Chaya leaves keep very well. Would be easy to air-freight fresh ones to you -- for example. Though I am the only one left in this village still growing and eating Chaya -- I can get sufficient on the Mexican side and arrange Air-Freight through Cancun -- if there was a demand.

IF papaya sells for $10 a pound (I doubt it) Chaya should be worth double that. That is to the people that really want the best in their diet and believe that goes a long way to living a happy old life instead of being plugged into a life support machine for the last 20 or so years of their lives as they slowly watch themselves chopped to pieces to satisfy the 'margins" of the insurance companies and their partners in crime -- The american Medical Association and the pharmaceutical giants (along with their "stooges" -- the FDA).

A system that, when combines, concentrates on emergency medicine rather than preventive.

Shark liver oil in the diet with Chaya gives incredible results. And also along with that "Root" I make to keep the hormone levels up. The Cacoa and Chili pepper does it's job as well. Fountain of youth my friend.


The following is the all time classic Mayan breakfast --

COMIDA DE YUCATA'N/SOPAS HUEVOS Y ENTRADAS

Crepas de Chaya

INGREDIENTES
Para las crepas: 50 gramos de mantequilla derretida, 6 huevos, 34 de taza de harina cernida, 12 taza de leche, 14 de taza de cerveza, sal al gusto, 20 gramos de mantequilla para el sarte'n.

Relleno: 12 kilo de hojas de chaya, 1 cebolla picada finamente, 4 cucharadas de aceite de olivo, 1 diente de ajo prensado, 2 cucharadas de salsa de soya, 14 de taza de crema, sal y pimienta al gusto.

Para la salsa blanca: 4 cucharadas de mantequilla en barrita, 2 cucharadas de harina, 2 tazas de leche, 1 taza de chaya cocida, picada y exprimida, sal y pimienta al gusto, 150 gramos de queso manchego o gruyere rallado. Para 4 personas.

PREPARACIO'N
Se rellenan las crepas y se acomodan en un refractario, se ban~an con la salsa blanca, se les espolvorea el queso y se meten a gratinar al horno o al asador.

Las crepas: Se mezclan todos los ingredientes y se licu'an, se deja reposar la pasta durante 30 minutos y se hacen las crepas en un sarte'n de teflo'n pequen~o, engrasa'ndolo de vez en cuando con mantequilla, poniendo un poco de pasta con una cuchara y moviendo ra'pidamente el sarte'n en forma circular. Se voltean y se dejan unos segundos y se sacan (deben quedar muy delgadas).

Relleno: Se pasa la chaya por agua hirviendo para que se cueza unos segundos, se saca, escurre y pica finamente y se exprime muy bien. La cebolla se acitrona en el aceite de olivo, se agregan la chaya, la salsa de soya y se sazona un minuto, se le an~ade la crema y sal y pimienta al gusto.

La salsa: Se fri'e la harina con la mantequilla durante un minuto, se le an~aden la chaya, la leche caliente, sal y pimienta al gusto y se deja espesar durante dos minutos aproximadamente.

PRESENTACIO'N
Se presentan en un bonito plato'n refractario, o en un refractario de vidrio metido en una canasta del mismo taman~o.
